Seasonal Nutrition is all about eating well through the year and bumping up your whole foods and veg intake. We make a seasonal lunch that might include grains, seeds, quick pickles and fermented vegetables, maybe some mussels or fish too. You’ll make a seasonal fermented pickle to take home and ferment and because treats are important, we’ll make some of those too. I talk through healthy fats and the truth about sugar and answer your questions through the day.

We make lighter than air savoiardi biscuits and a tiramisu to take home that all the family will fight over (they won't realise it's gluten free). There's fresh pasta to be made and eaten and a thin and crispy pizza to be baked. We'll roll out some crunchy grissini (breadsticks) and make the fluffiest potato gnocchi you've ever eaten. Depending on seasonal availability we'll make kraut or kimchi, a brine pickle like fermented carrot sticks, a citrus pickle like preserved seville oranges or lemons a fermented chutney or jam - like fig butter or maybe some probiotic ketchup. you'll also learn how to make and care for water kefir, milk kefir, kvass and labneh. Gluten Free Christmas Baking at River Cottage

On this exciting day of gluten free festive baking. We'll make some traditional Christmas delights for you to stash away for the party season - if you can resist them that long!

Panforte – a delicious Italian Christmas cake. Rich with toasted nuts, honey and scented with white pepper and cardamom. Served in thin slices with a cup of coffee or glass of vin santo. 

Christmas pudding – full of dark fruit, spices, sourdough breadcrumbs and topped with caramelised orange. Everyone takes home their own pudding to stash away for Christmas and steam again on the day.  

Quincemeat – a fruity homemade suet free quince mincemeat to take home and make your own batch of mince pies.

Frangipane topped mince pies – made with Hodmedods yellow pea flour or English quinoa flour, topped with our own mincemeat and tender frangipane. These can be frozen for Christmas if you like.

Yule log – using a chocolate genoise and whipped ganache, I will demonstrate a yule log that we can then enjoy with afternoon tea before everyone goes home excited for Christmas.

Abergavenny Food Festival

I'm excited to be hosting a Happy Gut tutored tasting at Abergavenny this year. The hour long session takes you on a whirlwind tasting tour of fermented food, probiotics, polyphenols, antiinflammatories and most importantly deliciousness! I'll talk through what you're tasting and give you some important gut health tips along the way whilst demonstrating some simple ferments for you to make at home. You'll be able to purchase much of the food from stalls around the festival and producers have kindly donated some delicious things for you to try. Fasten your seatbelt!

I'll also be doing two cookery demonstrations at the River Cottage fire pit, Late summer Happy Gut salads and ferments and gluten free campfire cooking, with quinoa chapattis, black dal and campfire cake - which we will eat still warm with spoons while I pour cream or coconut milk over the top. Omnomnom!

Happy Gut is my gut friendly day where we look at how to calm the gut and also feed up those all important microbes - depending on your individual needs. We learn about probiotics, prebiotics, anti-inflammatories and look at tonics to aid digestion. We make a delicious probiotic & prebiotic lunch that changes according to season, sample lots of fermented food and drink, make some digestive bitters and an antioxidant treat to supercharge your immune system.

Fermenting day in Bridport

Learn to safely ferment all manner of things in my light filled Bridport kitchen. Depending on seasonal availability we'll make kraut or kimchi, a brine pickle like fermented carrot sticks, a citrus pickle like preserved tangerines or lemons a fermented chutney or jam like fig butter or maybe some probiotic ketchup. you'll also learn how to make and care for water kefir, milk kefir, kvass and labneh. We'll take a break for a simple lunch of soup, salad, sourdough toast (gluten free), labneh and a host of pickles. 

Groups will be no larger than 7, so lots of opportunity to ask questions and get individual attention! The days are always lots of fun, hanging out with like minded souls and being silly while you learn. Apparently you learn more if you laugh a lot...

The course costs £90 including lunch, but I do ask you to bring your own jars and apron, or can send you home with your pickles in bags to jar up at home. I will email all recipes to you after the course. The deposit to secure your place is £45 with the balance payable no later than 1 week before the course date. 

Signed copies of both my books are available to buy for £15 on the day.

Advanced Gluten Free at River Cottage

On the Advanced Gluten Free day, it's all about treat food for special occasions. We make puff pastry (and turn this into cheese straws or seedy puffs), chestnut focaccia & choux buns, which we finish with cream and chocolate ganache, (or dairy free alternatives). I'll demonstrate french bread and an airy genoise sponge too (which we'll eat for tea!) and talk you through all the techniques and flour combinations needed to make these marvellous bakes. The kitchen team provide a delicious two course lunch on the day.

Fermenting Class in Covent Garden

Delicious pyjama brand Desmond and Dempsey are hosting a pop up called the Sunday Souk in Covent Garden, to celebrate the launch of their Moroccan collection. I'll be giving a Moroccan inspired evening fermenting class covering pink fermented turnip pickles, preserved lemons and simple caraway sauerkraut, plus a little cardamom and honey kefir lassi taster and a welcome gin kefir mojito. Your tastebuds, tummy and eyes will all be delighted I promise and you may find that perfect pair of summer pyjamas too!
