I teach five courses at beautiful River Cottage HQ in Devon:

Gluten Free Cookery is an introduction to wholegrain gluten free flours and some every day essentials like sourdough bread, shortcrust pastry, linseed crackers & savoury tarts and some non essential treats like chocolate chip cookies. The kitchen team provide a delicious two course lunch on the day.

On the Advanced Gluten Free day, it's all about treat food for special occasions. We make puff pastry (and turn this into cheese straws or seedy puffs), chestnut focaccia & choux buns, which we finish with cream and chocolate ganache, (or dairy free alternatives). I'll demonstrate french bread and an airy genoise sponge too (which we'll eat for tea!) and talk you through all the techniques and flour combinations needed to make these marvellous bakes. The kitchen team provide a delicious two course lunch on the day.

Italian Gluten Free is a celebration of the dolce vita gluten free! We make crisp savoiardi biscuits and a tiramisu to take home that all the family will fight over (they won't realise it's gluten free). There's pasta to be made and eaten and a thin and crispy pizza to be baked. We'll roll out some crunchy grissini (breadsticks) and make the fluffiest potato gnocchi you've ever eaten. Mama mia!

Seasonal Nutrition is all about eating well through the year and bumping up your whole foods and veg intake. We make a seasonal salad for our lunch with grains, seeds, quick pickles and fermented vegetables, we'll make our own sauerkraut or kimchi to take home and ferment and some low sugar treats. I talk through healthy fats and the truth about sugar and answer your questions through the day.

Happy Gut is my gut friendly day where we look at how the gut functions and how to calm it and also feed up those all important microbes - depending on what you need. We learn about probiotic, prebiotics, anti-inflammatories and look at tonics to aid digestion. We make a delicious probiotic & prebiotic lunch that changes according to season, sample lots of fermented food and drink, make some digestive bitters and an antioxidant treat to supercharge your immune system.
